Sjögren-Friendly Zucchini Salad

If you live with Sjögren’s disease, eating can sometimes feel challenging, especially with dry mouth, swallowing difficulties, reflux, or abdominal discomfort.
This light, hydrating zucchini salad bowl is ideal to support gut health while providing anti-inflammatory nutrients and plant-based protein.
Zucchini (also called courgette) has a high water content, which may make meals easier to tolerate when dryness is present.
Zucchini is also rich in antioxidants such as lutein, zeaxanthin, and beta-carotene (important for eye health), along with potassium and magnesium to support muscle and bone health, which is especially relevant for people living with autoimmune rheumatic diseases.
This simple salad is refreshing, nutrient-dense, and ready in 15 minutes.
Sjögren-Friendly Zucchini Salad Bowl

Servings: 2-3
Ingredients:
1 medium zucchini ends trimmed
1/2 medium lime, juiced
1 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar (optional)
Salt and black pepper to taste
1/2 Hass avocado, diced
1/3 cup frozen edamame cooked (as per package instructions)
3 stalks of green onions, chopped
1/3 cup sliced Kalamata olives
Fresh oregano, parsley, and basil to taste (optional)

Spiralizer (if available)
Small bowl
Large bowl

Instructions
Using a spiralizer, cut the zucchini into thin noodle-like strands. Trim into bite-size pieces (about 8 inches long) and place in a large bowl.
In a small bowl, whisk together lime juice, olive oil, balsamic vinegar, salt, and pepper.
Add avocado, olives, edamame, green onions, and herbs to the zucchini.
Pour the vinaigrette over the salad and gently mix.
Sprinkle feta cheese if desired
Serve immediately.
